Peas Pulov (Sweet Peas Fluffy Rice)
The peas pulov is an easy to make dish, consisting of a gentle combination
of green peas, basmati rice and some mild spices. It is enjoyed by
children and adults, and is mild, aromatic and delicious. Visually it is a
great treat, with the green peas sprinkled between the white basmati
Basmati Rice: 2 cups (or long grain rice)
Ghee or clarified butter: 3 tablespoons
Onion: 1 medium side, thinly sliced
Green Chilies: 3 sliced into halves
Cinnamon: 1 inch piece
Fresh Ginger: ¼ inch piece, de-skinned
Garlic: 3 cloves, crushed
Sweet Green Peas: 1 cup (fresh or frozen)
Red Chili Powder: ½ teaspoon
Turmeric Powder: ¼ teaspoon
Cilantro leaves: ¼ cup, chopped
Water: 4 cups
Salt: 2 teaspoons or as per taste

Heat a wide sauce pan to medium high for 30 seconds. Then add the
ghee (or clarified butter). Fresh butter can be used, instead of ghee as
well. The flavor is slightly different with butter.
Add the cloves, cardamom, cinnamon, green chilies, along with
sliced onions and sauté for 3~4 minutes or until the onions turn light
Now add ginger, garlic, sweet green peas and sauté for
additional 3~4minutes. You will get a nice aroma from all the spices,
blending with the onions and sweet peas.
Add the rice along with chili and turmeric powder. Add 2 ¼ cups
of water and salt. Mix them all well with a spatula couple of times.
Now transfer the entire content to a rice cooker or pressure
cooker and steam cook them. The time taken to cook the rice mix is same as
cooking plain steam rice.
Once the peas pulov is cooked, using a spatula, very gently mix
the entire content a couple of times, as the peas normally settles to the
top when cooked.
Top it off with the chopped cilantro leaves.
